Chicken Melts
- 1-1/2 cups shredded, cooked chicken
- 1 cup (4 oz) shredded Monterey Jack cheese
- 1/2 cup mayonnaise
- 1/4 cup finely chopped green onion
- 1/4 cup finely chopped celery
- One 2 oz jar diced pimiento, drained (Optional)
- 8 to 10 Konriko Original Brown Rice Cakes
- Slivered almonds
Combine first six ingredients; mix well. Spread mixture on rice cakes; sprinkle with almonds. Broil 3 to 4 minutes, or until browned and bubbly.
Yield: 8 to 10 servings.
NOTE: 1-1/2 cups lump crabmeat can be substituted for the chicken.
