Chicken Salad Sandwiches
- 1/2 cup mayonnaise
- 1 tbs lemon juice
- 1/2 tsp ground ginger
- Salt and pepper to taste
- 2 cups cubed fully cooked chicken
- 1/2 cup chopped red or green pepper
- 1/2 cup chopped celery
- 1/4 cup chopped onion
- 4 lettuce leaves
- 4 sandwich rolls
In medium bowl stir together mayonnaise, lemon juice, ginger, salt and pepper until blended. Stir in chicken, red pepper, celery and onion until well blended. Cover; refrigerate 1 hour to blend flavors. To serve; line rolls with lettuce and fill with chicken salad.
