Banana Nut Bread I
- 1 cup sugar
- 2 eggs
- 1/2 cup oil
- 2-1/2 real ripe bananas
- 3/4 tsp baking soda
- 1 tsp vanilla extract
- 1-1/4 cups all purpose flour (sifted)
- 1 cup pecans, chopped
Mash bananas. Add flour, soda, eggs, sugar, oil, vanilla, pecans. Mix well.
Grease glass loaf pan. Bake at 325F for 50-60 minutes. Test at 45 minutes.
