Banana Loaf Cake
- 1-1/2 cups sugar
- 1/2 cup Crisco
- 2 egg yolks (beaten)
- 1-1/2 cup flour
- 1 teaspoon salt
- 1/4 teaspoon baking powder
- 1/4 teaspoon soda
- 4 tablespoons buttermilk
- 3 medium, very ripe bananas (mashed)
- 1 teaspoon imitation vanilla, butter and nut flavor
- 2 egg whites, beaten
- Topping:
- 1 cup chopped walnuts
- 1 cup brown sugar
- 1 tablespoon margarine (softened)
Cream shortening and sugar. Add beaten egg yolks. Mix well. Add flour and buttermilk alternately; then add mashed bananas and nix well. Add vanilla flavor. Beat egg whites until stiff; fold in hatter. Pour batter in three one pound loaf pans. Sprinkle topping on unbaked dough. Bake at 350F about 30-35 minutes.
Topping:
Combine all ingredients and mix with hands. Serve cold in one inch slices.
