Broccoli Frittata
- 2-1/2 tbs finely chopped onion
- 2 tsp butter or margarine
- 1 pkg (10 oz) frozen chopped broccoli, cooked and drained
- 1/2 small clove garlic, crushed (optional)
- 1 cup cooked rice
- 2-1/2 tbs grated Parmesan cheese
- 2 eggs, slightly beaten
- 1/4 cup milk
- 1/2 tsp salt
- Dash of ground black pepper
- 1/3 cup grated mozzarella cheese
Saute onion in butter until tender but not brown. Add broccoli, garlic, rice, and Parmesan cheese; mix well. Combine eggs, milk, and seasonings. Stir into rice mixture. Turn into a well-buttered shallow 1-quart casserole. Top with mozzarella cheese. Bake at 350F for 20 to 25 minutes or until set.
